Arrabbiata sauce is an Italian spicy sauce and it’s name ‘arrabbiata’ literally means ‘angry’ in Italian. But don’t let the name scare you! The ‘angry’ refers to the spiciness that the sauce derives from the use of loads of red pepper flakes while making it. But you can always control the spice as per your preference to not make the sauce overwhelmingly hot.
This pasta is extremely simple in execution and it can never fail. I am personally in love with tomato based pasta sauces. This sauce too is made with loads of tomatoes along with some Italian herbs and of course red peppers for the spicy kick in every bite. It is very important to use good quality tomatoes for an extremely flavorful sauce. Just start with sautéing some red pepper flakes, garlic and onions in olive oil and add white wine to it. Once the wine cooks and reduces, we will be left with its wonderful flavors. Then add the tomatoes and the herbs to it and let the sauce simmer. Once done add in your choice of pasta. I used whole grain angel hair as I had it in my pantry. Usually penne goes very well with arrabbiata.
I know, here’s the question you will end up asking yourself: how can something this simple, be so good? Well that’s the beauty of many pasta dishes. Extremely simple to make with robust flavors. - 2 tablespoons olive oil
- 5 – 6 cloves of garlic, minced
- 1 (28 oz) can san marzano tomatoes
- 1 (15 oz) can tomato puree
- 1/2 cup white wine
- 1 tablespoon red pepper flakes
- 1 medium onion, chopped
- 1 tablespoon Italian seasoning
- 1/4 cup chopped basil
- 1 teaspoon sugar
- salt & pepper as per taste
- 10 oz whole grain angel hair pasta
- To make the sauce, heat some olive oil in a sauce pan. Add red pepper flakes, garlic and onions. Sauté for 2 minutes.
- Add the white wine to it and keep whisking for a minute. Cook it until the liquid reduces to half.
- Add the tomatoes and tomato puree along with Italian seasoning, sugar, salt and pepper. Reduce the heat to low and simmer for 30 minutes.
- Meanwhile to cook the pasta, bring a large pot of water to boil. Add a pinch of salt and a tablespoon of olive oil to it. Add the pasta and boil until al dente.
- Once the sauce is cooked, adjust the seasoning and stir in chopped basil.
- Add the pasta to the sauce and serve hot.
- You can also add some parmesan while serving.
